September 8th Webinar: Beef Nutrient Density with Dr. Stephan van Vliet

We are excited to share with you the first results from our year-long Beef Nutrient Density study. We have been working with farmers around the world, having them send in steaks, manure, soil, and forage, as well as asking them to answer a long list of questions about farm management. This first data set looks much like we thought it would. How a cow is managed has a lot to do with what is in its meat, and the variations are massive. Dr. Stephan van Vliet, our partner in this project, will share results from his lab at Utah State University and will talk Dan through some updates and recent findings in that research.

The below graphs are based on a sampling of 90 steaks - 60 grass-fed and 30 corn-fed:

People may have heard that the omega 3 to 6 ratio is one way of looking at the relative healthfulness of animal products. Generally below 4:1 is considered health beneficial with the closer to 1:1 being best. We found a pastured beef sample with a 1:1 ratio and a grain-fed one at 17.8:1. Average for grass-fed was 3:1 and for grain-fed was 7:1.

We are still accepting farmer and citizen scientist participants who would like to submit samples for our 10/1 sample run deadline. We were recently awarded grant money that will allow us to accept partners to sign up for free, so now is a great time to get involved. We're incredibly excited to be able to offer this opportunity to our community.
